apostrophes observed in late-night dining

I was just considering the local establishments, and noticed a pattern:

Canter's
Denny's
Jerry's
Izzy's
Du-Par's
Sitton's
Swinger's
Bob's

and even
McDonald's

My observation is that perhaps "'s" is a secret codeword for "open late".
