I had it pegged as a conspiracy--Apple ships AAC with iTunes, then makes importing MP3's from CDs excruciatingly slow (1.5x?). So of course you'll use AAC.
But when I tried it again tonight (on the latest iTunes), MP3 ripping was fast. No conspiracy at all, just bad coding.
